Authentic manicotti is made with crepes, not pasta, that are filled and baked. Add superfine sugar to taste. The filling will now be stiffer and can be used immediately.

If your ricotta is on the wet side, you will need to strain it, or else the filling will be too liquid and runny. Cannoli filling made with ricotta cheese and whipped cream is best stored in the refrigerator in a covered container. Stored this way, it will stay fresh for up to 4 days.
